We spoke to Chef Kosala Ratnayake to find out more about the fare being served at Williams Landing.
Chef Kosala grew up enjoying family feasts and he saw how cooking and delicious food created joy and connection. This passion led him to work with food professionally, honing his craft in the culinary industry for over 16 years in a variety of establishments from hotel chains like the Mantra Hotel Group to RSLs to gastropubs. He now wants to bring happiness to Williams Landing residents at every meal.
The menu at Williams Landing draws influence from traditional and popular dishes from all over the globe. It currently offers a selection of Asian, Western, Middle Eastern, Modern Australian, and South American dishes. For optimal flavour and nutrition, the menu is seasonal, and is updated according to what’s fresh and available, and residents’ preferences.
Some of Chef Kosala’s favourite dishes to prepare are Beef Lasagna with seasonal vegetables, Lemon Pepper White Fish, and Sticky Date Pudding served with Vanilla Custard, all crowd pleasers with Williams Landing residents.
